Introduction

My own thing. :-) My own thing. :-)
Number of Servings: 4

Ingredients

12 ounces Chicken Breast (cooked), no skin, roasted
8 tbsp Sweet Baby Ray's Honey Barbeque Sauce
    .5 cup, sliced Onions, raw
0.5 cup Bell peppers (Green, Red, Yellow, Orange)
    0.5 cup Peas, frozen
    1 slice (3-1/2" dia x 3/4" thick Pineapple, fresh

1 cup (8 fl oz) Water, tap

Directions

in a shallow sauce pan, boil the chicken. Turn the heat down to medium, then pour enough sweet baby ray's on the chicken to make a fairly thick coating. Turn twice so both sides of the chicken are covered.
Add one cup of water and the rest of the ingredients except the pineapple. Cook until onions are translucent, and the liquid reduced by about half, then add the pineapple. Turn down the heat and put the lid on. Let rest for at least five minutes to cook the fruit.

Serve over rice, ramen noodles, or dry chow mein noodles... May be garnished with sesame, bacon crumbles, or cilantro (aka Chinese parsley)

Serving Size: makes 4-6 servings
