Ingredients

10 large Egg, fresh, whole, raw
0.50 tsp Garlic powder
1 tsp Sea salt
2 tbsp Coconut Oil
3.50 cup, cubes Sweet potato
1/2 cup Red Onion Raw chopped
3/4 cup bell pepper, red, sweet, raw chopped
3 cup Spinich - fresh Queen Victoria baby spinich
20 oz Turkey Sausage 93% lean (from ground turkey)

Directions
Heat oven to 400 degrees. Spray a 9 X 13 baking dish with olive oil spray. Melt the coconut oil in a medium bowl and then put the sweet potatoes in and toss until coated. Place the sweet potatoes on a parchment lined cookie sheet and sprinkle with 1/2 tsp. of the salt. Put in oven and bake 20-25 min, until soft.
While the potatoes are baking brown the sausage, onion, and pepper.
Place the meat mixture in baking dish, add the sweet potatoes and spice and mix.
Whisk the eggs add the garlic powder and 1/2 tsp. Sea salt. Pour over the meat mixture, put in oven and bake 25-30 min, until eggs are set in the middle.
Serving Size: Makes about 12-16 pieces
