Ingredients

    3.0 tbsp Cinnamon, ground
    0.13 tsp Salt
    2.0 tsp Vanilla Extract
    36.0 tsp Organic cane sugar
    1.0 large Egg white, fresh
    36.0 tsp Domino Light Brown Sugar
    4.5 cup Trader Joe's Organic Raw Almonds

Directions

Mix together in a medium bowl sugars, cinnamon, and salt. In another medium bowl, whisk together the egg white and vanilla until it is frothy and forms soft peaks. Add the almonds and coat thoroughly. Pour cinnamon sugar mixture over almonds and egg white and toss to coat. Optional: Prepare your slow cooker by spraying it with cooking spray. I don't do this, but it may make your clean up easier. Do NOT use a liner as you will tear it with the required frequent stirring. Add the cinnamon almonds to your slow cooker and turn it to LOW. Be prepared for your house to smell amazing! Cook on LOW for about 3-4 hours, stirring every 20 minutes. In the very last half hour, add ¼ cup water and stir well. This will ensure a crunchy coating and help the mixture to harden. Line a baking sheet with parchment paper and spread the almonds onto the sheet to cool. The almonds will be sticky. They will set as they cool. (If not, a 250°F oven can help them set if something goes wrong.) Once completely cool, store at room temperature in a tightly sealed container such as a cookie tin for 1 week (if they last that long). Serving Size: Makes 24 1oz servings (or 2 gift servings)
