Ingredients

    3 cups shredded hash browns, thawed and patted dry
    2 tsp Olive Oil
    1/4 tsp Salt
    Dash Black Pepper
    1.0 tsp Mrs. Dash (R) Original Blend
    4.0 large Egg, fresh, whole, raw
    1/4 cup Milk, 1%
    1 - 9 oz. package Frozen Steamers Asparagus Cuts
    1/4 cup, shredded Swiss Cheese

Directions

Thaw frozen hash browns. Pat dry with paper towel until no water comes out. Preheat the oven to 400F and grease 6 jumbo muffin cups. Mix together the hash browns and olive oil and stir. Add salt and pepper to taste, if desired. Add 1/2 cup of the hash browns to each muffin cup. Press the hash browns against the bottom and sides to create the nest. Bake for 15 minutes. In the meantime, prepare the asparagus in the microwave according to package directions. In a medium sized bowl, whisk together the eggs, shredded swiss cheese, Mrs. Dash, salt, pepper and milk. Remove hash brown nests from the oven. Evenly divide the steamed asparagus between them. Pour the beaten egg mixture in each nest. Bake for a final 15 minutes, until the tops are puffy and golden brown. These can be refrigerated for up to a week, or frozen for up to 6 months. (Cool before freezing!)
