Number of Servings: 5

Ingredients

    4 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    .25 cup, chopped Onions, raw
    .25 cup, chopped Peppers, sweet, red, fresh
    1 sweetpotato, 5" long Sweet potato
    2 1tsp Olive Oil

Tips

Add additional veggies such as fresh spinach or celery. You can also prepare by browning bacon in your pan first and cooking the veggies in the bacon drippings. Really good that way but not real healthy!


Directions

chop up all veggies and put in pan with about 2T of oil. Stir frequently. Once veggies start cooking really good, add about 1/2 C water. Keep on relatively high heat as this water begins to make a gravy. Keep stirred. Once this water cooks down, add another 1/2 cup of water, a little at a time. Add seasonings... salt, pepper, pepper flakes, garlic powder, parsley flakes, cayenne pepper. Turn down and cook till potatoes are fully cooked.
Great as a side with dinner items also!
