Introduction

Low calorie blueberry muffin gets a boost with Quinoa. I used a Stevia baking mix to cut calories. I also used whey from yogurt. You can substitute plain ff yogurt or milk, but it will increase the calories. These muffins will be chewier than you are used to due to the fat substitution with ff yogurt. Ingredients

    1.0 cup, unthawed Blueberries, frozen (unsweetened)
    1.0 tbsp Soy Flour
    2.0 tsp Baking Powder
    4.0 oz Trader Joes, Plain non fat yogurt
    1.0 cup Nature's Earthly Choice Quinoa - 1/4 cup dry 1/2 cup cooked
    1.5 cup Flour - Gold medal all purpose flour
    59.0 gram Sugar, Domino light all natural sugar & stevia blend
    8.0 oz whey liquid from homemade yogurt

Directions

Preheat oven to 400F. Mix dry ingredients and then add pre-cooked Quinoa. Mix in yogurt, whey, soy egg, and blueberries until just combined. Add enough water to fully combine, about a cup. Mixture can be lumpy. Fill muffin cups about 2/3 full depending on their size to get 12. Mine made about 15 muffins. Bake in oven about 20 min until done. Serving Size: Makes 12 muffins. A muffin is a serving.
