Ingredients

    4.0 tbsp Butter, salted
    3.0 cup, shredded Cheddar Cheese
    1.0 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
    2.0 medium Carrots, raw
    1.0 head, medium (5-6" dia) Cauliflower, raw
    2.0 stalk, medium (7-1/2" - 8" long) Celery, raw
    3.0 clove Garlic
    1.0 cup, chopped Kale
    1.0 medium (2-1/2" dia) Onions, raw
    4.0 cup Vegetable Broth

Directions

Melt butter in pan. Saute onion, garlic, celery, and carrot until softened. Add veggie broth, cream, and cauliflower. Bring to a boil, stirring occasionally. Reduce to a simmer and cover until cauliflower softens. Add cheese a little at a time, stirring frequently to keep from sticking. Add kale. Use immersion blender to break down to desired consistency. Serving Size: Serves 8
