Ingredients

    2 tsp Olive Oil
    1 Med. Green Bell Pepper
    1 Med Red Bell Pepper
    1/4 yellow onion
    1/4 tsp kosher sale
    1 tsp black pepper
    1 cup Egg White--All Whites 100% liquid egg whites
    1/2 cup, crumbled Feta Cheese
    2 cups fresh spinach

Directions

1. Preheat oven to 375 F
2. Olive oil to skillet and bring medium low heat
3. Sauté onions and peppers until tender, about 7 mins
4. Sprinkle mixture with salt and pepper
5. Pour egg whites into the skillet and cook for 3 mins
6. Sprinkle the top with feta and spinach.
7. Put Skillet in oven and bake, uncovered, for 8 to 10 minutes. (If you use whole eggs instead of egg whites, bake at 400 F.)
8. Loosen the edges of the frittata with a rubber spatula, then invert onto a plate.
