Ingredients

3 cups hulled pumpkin seeds
1 T curry powder or chili powder (1 tsp cumin if making with chili powder) (or other spice blend you like)
1 tsp salt
3 T olive or canola oil
Directions
Preheat oven to 300 F. Line a baking sheet with foil or parchment.
Place seeds in a medium sized bowl. In a small bowl combine spices. add oil to seeds, mix, and then sprinkle with spices, tossing or mixing to coat evenly.
Spread into a single layer on the baking sheet. Bake for 25 to 30 minutes, stirring occasionally. Check often during last 5 minutes to make sure the seeds don't scorch.
Remove to a bowl to cool completely. Store in an airtight jar for up to 1 week at room temp, or 1 month in the fridge.
