Ingredients

2 small (6" to 6-7/8" long) Banana, fresh
2 large Egg, fresh, whole, raw
.5 cup Oats, Quaker
1 dash Salt
1 tsp Baking Powder
.5 tsp Cinnamon, ground
Tips
Because they are very banana based, the consistency will be moister than a regular pancake. To counteract this, you may add more oatflour, but that will throw off the nutritional information. Tastes like banana bread and is quick and easy to make instead of making a banana bread :)
Directions
Using a fork, mash bananas and eggs together in a bowl to create a uniform consistency. In a power blender, turn oats into oat flour and add to the wet ingredients along with the salt, baking powder and cinnamon. Using a quarter cup measure, pour onto hot non-stick griddle or pan. Flip when bubbles appear and underside is browned. Makes 8 pancakes per batch. Very easy to half
