Ingredients

    1 can Healthy Request Cream of Mushroom Soup
    1 soup can of water
    1 jar Trader Joe's Fire Roasted Red Peppers, drain & rinse and chop
    1 can Bush's Black Beans, drained and well rinsed
    1 cup Salsa Verde - choose your favorite
    1/2 cup fresh cilantro, chopped
    1 lb extra lean turkey breast, cooked and drained (if necessary)
    4 green onions (Scallions) use white and green, chopped
    1 1/2 cups Kraft 2% milk 4 cheese Mexican cheese blend, shredded
    6 Low Carb Mission Tortillas - really high in fiber!!

Directions

Heat oven to 350 degrees. Prepare 13 X 9 baking dish with non stick cooking spray.

Mix soup and water until well blended. Add salsa verde, half of the chopped cilantro and half of the chopped green onions. Set aside.

Mix cooked turkey, beans, red peppers, 1 cup of sauce and 1 cup of cheese blend, and the remaining cilantro and green onions.

Spoon meat mixture into tortillas, dividing equally, about 1/2-3/4 cup of mixture per tortilla. Roll up and place the seam side down in baking dish. After all burritos are in dish, pour remaining sauce over all and cover with the remaining cheese. Cover with foil and put in preheated oven.

Bake for 40 minutes covered. Remove foil and bake for 20 minutes or until bubbly.

Garnish with chopped tomatoes, salsa, chopped cilantro, chopped green onions - whatever you choose. Recipe nutrition and points did not calculate garnishes.
