Ingredients

1 medium (2-1/2" dia) Onions, raw
1 serving 1 Med. Green Bell Pepper
.5 cup, pieces or slices Mushrooms, fresh
6 tsp French's Hearty Deli Brown Mustard
.5 tbsp Kal Nutritional Yeast Flakes
.5 tsp Chili powder
.25 tsp Dill weed, dried
.25 tsp Onion powder
.25 tsp Garlic powder
.25 tsp Turmeric, ground
0.25 tsp Morton Iodized Salt
.13 tsp Pepper, black
2 cup Baby Spinach (raw)
10 serving Corn tortillas (Mission brand, extra thin, yellow corn, 6")
1 block Tofu, firm

Prep veggies, spices, and tofu night before to save time in the morning.

Directions:
Prep Tofu: Place drained tofu on a paper towel on a plate, and cover with another paper towel. Place a heavy pot on top of tofu to mash it down to squeeze lots of the water out before using tofu. Use a few more paper towels to soak up the moisture.
Place water in a large nonstick pot. Add onion, bell pepper, and mushrooms. Cook, stirring occasionally for 5 minutes. Meanwhile, place tofu in a bowl and mash. Add seasonings to tofu and mix well. Add the spinach & tofu mixture to the veggies that are cooking and cook until heated through (about 5 minutes), stirring frequently.
Heat tortillas briefly in microwave and stuff with mixture & serve, yum! (may enjoy a little salsa on top)
