Introduction
My Suarts shelled bean replacement as Suarts shelled beans aren't sold here. This can be garnished with a dollop of sour cream or/and shredded cheese of your choice. It's best witha dollop of butter I think. This is good with cornbread, or over brown rice. 1 oz Bacon - Raw - 1 oz - nutriondata.self.com (by SATINSWAN)
4 oz Onion, sweet, raw
40 fl oz Water, tap
1 tsp Pepper, red or cayenne
0.5 tsp Diamond Crystal - Kosher Salt (by SHIRTTALES)
Tips
These can be made in a slow cooker just set on high until boiling then cook on medium or low to keep cooking for about 8-10 hrs
Directions
Chop slice of bacon and cook slowly over medium heat to render fat, then add chopped onions 1/2 cup should do it. Cook the onions over medium heat stirring to prevent burning (sometimes I also add celery chopped 1/2 c or a can of Rotel tomatoes) until clear or golden if this is what you want (caramelized) add beans and water. Stir to get mixed well and onion off the bottom. Over high heat bring to a boil turn adjust heat just low enough to keep boiling with a cover on. Cook slowly for 6 hrs or so. towards the end add salt and cayenne pepper and serve.
