Ingredients

    1.5 tbsp extra virgin olive oil
    1 large onion, chopped
    2 cloves garlic, chopped
    8 medium stalks celery, raw, chopped
    1" piece of raw ginger Root
    1 medium-sized Granny Smith apple, peeled and chopped
    1 large head cauliflower, washed and chopped into small florets
    1.5 cup tomato puree
    2.5 tbsp curry powder
    1/8 tsp of coriander
    Salt & pepper to taste
    3 tbsp apple cider vinegar
    5 grams (1/3 cup) raw cilantro, chopped
    4 cups water
    Optional: dried brown mustard seeds, chili pepper, marjoram, oregano, lemon zest to taste
    Optional: finish with squeeze of fresh lemon juice

Directions

Heat oil in a large saucepan on medium heat. Add diced onion, garlic, celery and ginger root. Sautee for a few minutes before adding apple and ginger, cooking until all are somewhat (but not completely) soft. Add cauliflower, tomato puree, curry powder, coriander, freshly ground black pepper and salt to taste (I used about 2 TBSP salt). Add water to cover. Stir and bring to a boil, then reduce heat to simmer. Add optional dried seasons to taste.

Cook until cauliflower is soft enough to puree (at least 15 minutes, probably more). Shut heat and puree soup with stick blender until smooth. Add cider vinegar to taste and fresh lemon juice if desired. Garnish with cilantro and enjoy!
