Introduction

Make sure the batter is at room temperature, I make the batter ahead of time and just let it rest on the counter until I've pulled out the roast, then raise the temp of the oven and have at it. Ingredients

    2 cup Flour, white
    2 cup Milk, 3.25%
    4 large Egg, fresh, whole, raw
    .25 cup Sunflower Oil
    6 1tsp Sunflower Oil

Directions

Mix flour, milk, eggs and first amount of oil until no lumps remain (I use an immersion blender in a large glass measuring cup).

Distribute second amount of oil in a 12-muffin tin and put into a hot (425 degree) oven for 5 minutes or until the oil is just this side of smoking.

Distribute batter into hot oiled cups, return to oven, bake about 20 mins until puffed and browned. Serve immediately.... leftovers (if there are any) make nice breakfast buns.
