Introduction

These Paleo friendly cookies are sweet enough for desert but are also a great healthy snack. Pretty enough to offer with coffee for a simple company dessert. Ingredients

    1-1/4 Cup Bob's Red Mill Almond Flour
    3 Tbsp Coconut, shredded (a bit more for topping)
    2 tbsp Coconut Flour
    3 tbsp Honey
    2 tbsp Coconut Oil -
    3 Tbsp Orange Juice
    Zest of 1 orange
    1/4 tsp. sea salt
    1 tsp. vanilla extract


Directions

Preheat oven to 300 degrees.
Place all dry ingredients in the food processor with the metal blade and process until everything is finely ground.
With the processor running, add the remaining ingredients and process until a dough forms.
press the dough out on parchment until it is 1" thick. Cut circles with a 1" biscuit cutter. Press the top of each round in a bit of coconut shreds.
Bake on a parchment lined sheet pan for about 20 minutes. The only browning should be a bit around the base and the top rim. Cool completely and enjoy!
