Ingredients

2 tsp. oil
1/2 vidalia onion, chopped
Large handful of fresh parsley, chopped
1-1/2 c. fresh spinach
1/6 block firm tofu, drained and crumbled
2 eggs
1/4 c. milk
1/2 to 3/4 c. grated mozzarella cheese (optional)
Directions
Drain tofu and mash in a bowl with hands or a fork. Add eggs and milk, and mix together. Set aside.
Saute onions in 1 tsp oil until translucent. Add parsley and spinach and saute until it begins to wilt. Add another tsp oil if necessary, and pour egg mixture over the vegetables. Stir to combine all ingredients in the pan. Either form into a pancake and cover to cook through for a firmer patty, or continue mixing for a more scrambled egg consistency. When it's almost done, sprinkle cheese on top and cover (or place under broiler) to melt.
