Ingredients

    For the Batter
    1 cup Organic Soy Milk, Vanilla, sweetened
    1/2 cup Organic Almond Milk ,unsweetened
    1/2 cup Coconut Milk Beverage, unsweetened
    1 tbsp Organic Apple Cider Vinegar
    1 tbsp Cornstarch
    1 cup Whole Wheat Flour
    1 cup All-Purpose Flour
    3 Tbsp Organic cane sugar
    1Tbsp Baking Powder
    1/2 tsp Himalayan Pink Salt
    1/4 tsp Ground Cardamom
    2 tbsp Canola Oil
    1/3 cup Water
    1 tsp Vanilla Extract
    1 cup Organic Wild Blueberries, Frozen

    For the Syrup
    1/2 cup Wild Maine Blueberry Jam
    1/2 cup Organic Pure Maple Syrup
    half the juice of 1 lemon
    lemon peel from 1 lemon, grated

    Optional Toppings (for garnish, not factored into calorie count)
    Organic Powdered Sugar
    Fresh Organic Blueberries

Tips

Make ahead and freeze for quick breakfast. Simply put in toaster to heat up.


Directions

Combine all your non-dairy milks. Separate 1/2 cup amount and mix with the cornstarch until thoroughly combined. Reintroduce into the other milks along with the vinegar. Set aside.

In a separate bowl, mix the dry ingredients (flours, sugar, baking powder, salt and cardamom). Make a well in the mixture and add your milk mixture along with the oil, water, and vanilla. Mix with a wooden spoon until you get a lumpy batter. Fold the blueberries in.

Follow manufacturers directions for your waffle iron.

In the meantime, make your syrup by combining all the syrup ingredients in a microwave safe bowl. Put in microwave and heat for about 1 minute.

When waffles are done, top with optional garnishes and serve alongside the syrup.

Serving Size: Makes 7, 5-heart shaped "Waffle Flowers" - a total of 35 mini heart waffles.
