Ingredients

CRUST:
6 cups Riced Cauliflower (or two bags frozen from Sam's Club)
1 tsp Basil, dried
1 tsp Oregano, ground
1 tsp Garlic powder or Tuscan Garlic seasoning
1/2 cup Parmesan Cheese, shredded
1/2 cup, shredded Mozzarella Cheese, whole milk
2 Eggs Large Brown Cage Free, Grain Feed & Free Roaming
1 dash Salt
TOPPINGS:
1 cup, pieces or slices Mushrooms, fresh
2 leaves Basil
1 cup, shredded Mozzarella Cheese, whole milk
Tips
Cook the crust to a very golden brown so it has a crispy edge and not soggy in the middle.
Directions
1. Preheat oven to 425.
2. Place riced cauliflower in a large fry pan to cook making sure to get as much moisture out as possible.
3. Place cauliflower in a large bowl and fluff with a fork. Add basil, oregano, garlic, Parmesan and mozzarella. Mix well. Add salt to taste. Add egg and stir to blend completely.
4. Press mixture out onto a baking sheet lined with parchment paper that's been lightly sprayed with non-stick spray. Press out to about 1/4 inch of slightly thicker. Keep mixture tight together and in an even layer.
5. Place pan in oven and bake until golden brown. Bake 20-30 minutes. It should be golden brown and not soggy. Sight is the best indicator; baking may be longer or shorter.
6. Remove from oven, top with desired toppings, and return to oven to melt cheese, etc. Let rest for a couple of minutes and then slice and serve.
I put pepperoni on half of it for my husband. The nutrition calculation doesn't include the pepperoni.
