Ingredients

8 Cherry Tomatoes (or whatever tomatoes you have)
Half Zucchini sliced
2 clove Garlic
Basil
Extra Virgin Olive Oil small amount
Butter small amount
Parmesan Cheese, grated
San Remo Gluten Free Spaghetti approx 50g
Directions
Put the Pasta into boiling water to cook 6-8mins
Saute the Zucchini in butter on medium high heat until slightly browned.
Add the olive oil to the pan (just a splash maybe half a tbsp at most) and saute the garlic on medium heat.
Add the tomatoes and a little bit of the basil and cook until they are softened..
Turn heat down if cooking too fast.
Add a little salt and pepper to taste.
Meanwhile drain the cooked pasta.
Add the zucchinis back into the pan and throw the pasta in
Add some more basil and toss to coat the pasta
You can add a small amount of pasta water and/or olive oil if it seems a little dry (will depend on tomatoes)
Put into pasta bowl and sprinkle with parmesan - or add generously depending on your preference.
