Introduction

Low carb meets hearty rye bread. This is great with your Irish stew for St. Pat's day or wth any soup or stew for a patty melt slider or tuna melt or grilled cheese or egg salad or any other thing you want to put on a sandwich. I slice this into 4 biscuits and one with the accompanyments fills me up. Even better if you toast it later in the oven or toaster oven. This did not rise as well with egg beaters or with any of the vegan egg substitutes I have tried so far. Low carb meets hearty rye bread. Ingredients

    4 tbsp *Flax Seed Meal (ground flax)
    .5 tsp Baking Powder
    .5 tsp Caraway Seed
    1 1tsp Olive Oil
    1 large Egg, fresh, whole, raw

Directions

You can mix all of the ingredients in one mug, but I use a couple of other cups. One to combine the dry ingredients with a fork and one to whisk the egg with a fork. I put the oil in the 10-oz microwave-safe mug I am going to bake in. Measure dry ingredients into a small cup or bowl and combine with a fork. Break egg into another small cup or bowl and whisk with a fork. pour dry iingredient into mug with oil add egg and whisk all ingredients together until smooth. Microwave for 1min-1 min 20 seconds. Toothpick should come out dry. If this does not fall out of the mug, Use a knife around the edge and it should fall out. Slice into 4 biscuits. Serve with butter or mustard or cream cheese or anything you put on bread.
