    4 medium (7" to 7-7/8" long) Banana, very ripe
    21 Dates
    1 cup, packed Brown Sugar
    1/2 cup Kefir - Plain
    3/4 cup Bob's Red Mill - Organic Whole Ground Flax Seed Meal
    1/4 cup Extra Virgin Olive Oil
    4 large eggs
    2 1/2 cup Flour, white
    2 tsp Baking Soda
    1 1/4 tsp Salt


Additional options: add 1 cup chopped nuts, blueberries (cover with flour first)


in a food processor, Puree over ripe bananas, dates, brown sugar, ground flax seed, kefir, and Olive oil until smooth. Add eggs pulse blend till mixed. transfer to a large mixing bowl.
Sift dry ingredients together and add gradually to banana mixture blending with a spatula or wooden spoon. Pour into a greased 13 x 9 inch baking dish. Bake at 350 for approximately 40 minutes or when an inserted tooth pick comes out clean.

Serving Size: 24 2 inch pieces
