Ingredients

    16 oz. Beef, round steak
    1 tbsp. Coconut Oil
    1/4 cup Bob's Red Mill Tapioca Flour
    1 tsp Salt
    1/4 tsp. black pepper
    2 cups. sliced carrots
    2 tbsp. Marsala Cooking Wine
    .5 cup Pacific Natural Foods Organic Beef Broth

Tips

This can be done in a slow cooker on high, 4 hours. Brown meat in skillet on range first.


Directions

1. Select sauté function on Insets pot, and add coconut oil.
2. Cut steak into 4 pieces, tenderize, season with salt and pepper, and dredge in tapioca flour.
3. Brown steak in the oil, in batches, remove from pot, set aside.
4. Deglaze pot with Marshall wine, then turn Instapot off.
5. Return meat to the pot, add beef broth and salted carrots.
6. Lock lid on, and select 'Beef/Stew' function. Set time for 25 min.
7. Remove steak to serving dish, gently stir carrots and 'pot' gravy, pour over meat.
7. After cooking time, allow pressure to slow release for 12 min. Before manually releasing pressure valve.

Serving Size: makes 4, 4 oz. servings with 1/2 cup carrots
