Introduction

Fully loaded baked "potato" salad using cauliflower. Fully loaded baked "potato" salad using cauliflower.
Number of Servings: 10

Ingredients

    4 medium slices, Bacon
    4 cups (1 inch pieces) Cauliflower
    4 stalks Baby Green Onions
    1 cup Mayonnaise, regular
    1 cup Sour Cream
    1 cup, shredded Cheddar Cheese

Tips

I make this to fit into a low carb plan. Use low-fat mayo and sour cream and even turkey bacon if it works better for your plan. Make it your own & enjoy! Take it to your next pot luck or barbeque!


Directions

Roast (then cool) 4 cups of bite sized cauliflower florets
(olive oil, salt, pepper, on cookie sheet @ 350* 20 minutes)
Cook, then crumble, bacon slices
Slice the green onions
Mix all ingredients together, refrigerate until serving.

Serving Size: makes about 10 1/2 cup servings
