Introduction

Ingredients

    2 TBS oil
    2 1/2 C diced zucchini
    2 C peeled, diced apple
    1 stalk celery, diced
    1 TBS curry powerder
    3 C vegetable broth
    1 TBS chopped parsley
    1 tsp salt
    1 C yogurt

Directions

Heat oil in a 2-3qt. pot and sate zucchini, apple, and celery, stirring occasionally for 5-10 mins. Add curry and cook 1 minute longer. Add broth, parsley and salt and bring to a boil; cover and simmer for 20 - 30 minutes, or until vegetables are soft enought to puree. Puree smooth in blender, processor or food mill. Chill. When cold, stir in yogurt and adjust salt to taste
