    2.0 tbsp Olive Oil
    150.0 Grams Broccoli, fresh
    350.0 Grams Cabbage, fresh
    400.0 Grams Cabbage, fresh
    150.0 Grams Carrots, raw
    100.0 Grams Cauliflower, raw
    150.0 Grams Celery, raw
    200.0 Grams Mushrooms, fresh
    1.0 medium (2-1/2" dia) Onions, raw
    75.0 Grams Scallions, raw
    100.0 Grams Spinach, fresh
    350.0 Grams Zucchini
    1.0 serving hunt's diced 14.5 oz can
    43.5 oz swanson broth 14.5 oz can
    2.0 cup (8 fl oz) Water, tap

Directions

In a large (6 quart) pot saute onions and mushrooms in olive oil until tender. Add all other vegetables (reserving spinach) and liquids. Season to taste. Bring to a boil. Reduce to simmer until done to taste. Add spinach toward the end of cooking if you don't want it too "done." Serving Size: Each pot makes approximately 16 cups
