Ingredients

1 1/2 lbs boneless, skinless, chicken breasts, finely chopped (about 3 cups)
1/4 cup lime juice, divided
2 garlic cloves minced
1 can (16ozs) refried beans
1 1/2 cups light or fat free sour cream, divided
1 package (1 1/4) dry sloppy joe mix, divided
1 tbs picante sauce
1 avocado, chopped
cooking spray
1 cup shredded cheddar cheese
2 tomatoes, chopped
1 can (2 1/4 oz) sliced black olives drained
1 bag light tortilla chips
Directions
Place Chicken in a small bowl. Sprinkle with 3 TBS lime juice, and garlic and mix well. Set aside. Combine beans, 1/2 cup sour cream, 2 1/2 TBS sloppy joes seasoning mix and the picante sauce in medium bowl. Spread bean mixture in bottom of shallow 2-quart casserole dish. Combine avocado and remaining 1 TBS lime juice in small bowl; sprinkle over bean mixture. combine remaining 1 cup sour cream and 2 1/2 TBS sloppy joe seasoning mix in small bowl; set aside. Spray a large skillet with cooking spray. Heat skillet until hot; add chicken in single layer. Do not stir. Cook about 2 minutes or until chicken is brown on bottom. Turn chicken and cook until other side is brown and no liquid remains. Break chicken into separate pieces with fork. Layer chicken, sour cream mixture, cheese, and tomatoes over avocado mixture. Top with olives. Refirgerate until completely chilled. Serve with chips. Makes 2 quarts dip or about 30 appetizers.
