Ingredients
-
2 head, large (6-7" dia) Cauliflower, raw
4 clove Garlic
1 package (5 oz) Parmesan Cheese, hard
2 tbsp Extra Virgin Olive Oil
Tips
You can also steam the rice in the microwave before adding it to the wok if you wish, this will speed up the process.
Directions
Grate your cauliflower. I use the food processor but you can use a grater too. Just about 5 pulses in the food processor tho, too much will make it too fine.
In a wok or skillet, add 1 tbsp olive oil and 2 cloves minced garlic
When hot, add half of cauliflower, stir to mix up with oil and garlic, place glass lid on top.
Stir every 1 - 2 minutes and allow to cook till cauliflower is done to your liking, I like it a bit al dente myself.
Once the first half is done, do the same with the second half.
Place in bowl and stir in grated Parmesan.
Enjoy!
