Ingredients

    1.5 cup, sliced Zucchini
    0.5 large Onions, raw
    1 cup Bell peppers (Green, Red, Yellow, Orange)
    2 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    1 dash Salt

Directions

1. In a heat 1 tbs of coconut oil
2. Add the rounds of zucchini and roast for about 2-3 minutes on each side
3. Remove from pan and add rest of the coconut oil
4. Add chopped onions and bell peppers. Roast till carmalized
5. Season with salt and pepper
