Introduction

Number of Servings: 4

Ingredients

    1 lb Chicken Breast, no skin, no bones; cubed
    2 Tbsp Fish Sauce
    2 Tbsp Oil
    Juice of 1 lime
    1/8 tsp ground cayenne pepper
    1 Tbsp Oyster Sauce
    1/2 cup Chicken stock
    10 large spears Asparagus, cut into bite sized pieces
    1 Tbsp Basil, chopped
    1 Tbsp Chives, chopped
    1/2 cup Cashews, dry roasted; coarsly chopped
    Salt to taste
    Black pepper to taste

Directions

Prepare ingredients as indicated above. Toss chicken cubes into 1 Tbsp. of the fish oil, salt and pepper. Mix cayenne pepper, remaining fish sauce, oyster sauce, and lime juice in small bowl. Set aside. Heat vegetable oil in large skillet or wok over medium heat. Place chicken in oil and stirfry until cooked through. Remove chicken and set aside. Add asparagus and chicken stock to skillet. Cook until al dente. Add chicken back to skillet along with lime juice mixture. Simmer 1-2 minutes. Add chopped chives, basil, and cashews. Season to taste. Serve.
