Ingredients

2 clove Garlic
1 cup, chopped Onions, raw
4 serving Eggs Large Brown Cage Free, Grain Feed & Free Roaming (1 egg)
1.33 tbsp Extra Virgin Olive Oil
16 tbsp Parmesan Cheese, shredded
1 dash Pepper, black
.5 tsp Pink Himalayan Sea Salt (Evolution Salt Co) (by TAMMAGDALENO)
Tips
Wide skillets work best. Topping it with a cover speeds cooking.
Directions
On med high heat
Add spinach to skillet w/ 1/4 c water. Cook down till water is almost gone. Push spinach to edge of pan. (Can choose to cover early to speed melting)
reduce to med to med/low heat
add 2t oil to center of pan add onion/garlic & salt/pepper sautee, mix in with spinach and move to the outside of pan
add 2t oil to center add eggs. (I prefer to crack mine in the pan and let the whites start cooking before mixing in the yolk) Can cover to assist egg cooking. When half way done, mix in with spinach.
