Introduction

Ingredients

    1 tbsp dried onion
    5 lb tomatoes, chopped
    2 monkey face peppers, seeded and diced
    1 teaspoon kosher salt
    1 tsp garlic powder
    1⁄4 teaspoon black pepper
    1⁄4 tsp allspice
    1⁄4 tsp celery seeds
    3 tbsp raw sugar
    2/3 cup 5% apple cider vinegar

Directions

Cook the onions though sugar for about 40 minutes over medium heat.
Mill through a food mill then return to pot and add vinegar.
Cook until thickened - about 30 minutes.
Process 20 minutes in a waterbath.

Serving Size: Makes ~ 3 3/4 cups, 26 (2 tbsp) servings
