Introduction

Number of Servings: 4

Ingredients

    1 lb 80/20 ground beef chuck
    1 small zucchini, finely grated
    1 cup mushrooms, chopped
    1 serving Soup, LIPTON, RECIPE SECRETS ONION, Mix, Dry
    1 can canned tomatoes, diced and undrained
    .75 cup White Rice, medium grain
    1.5 c water
    1 cup Mozzarella Cheese, part skim milk

Directions

Brown ground beef in a large pan. When about half way done, add shredded zucchini and mushrooms and continue cooking until beef is completely browned. Add next 4 ingredients and mix thoroughly. Cover and simmer until rice is cooked through, stirring occasionally so it doesn't stick to the bottom of the pan. Remove from heat and stir in cheese. Serve.
