Number of Servings: 10

Ingredients

    3 tbsp Olive Oil, ghee, or butter
    1 large onion, chopped (about 1.5 to 2 cups)
    1 tbsp Sage, ground or rubbed
    1 tsp Cumin seed , ground
    1/2 tsp Celery seed
    2 cups Low Sodium Vegetable or chicken Broth
    2 cups water
    8 cups chopped Broccoli, fresh (about 1-1/2 lbs. chopped)
    4 cups chopped Zucchini
    1 tablespoon Hot Sauce, Sriracha Hot Chili Sauce
    1 14 oz. can Coconut milk, full fat
    1 medium Avocado, peeled and pitted

Directions

Put the olive oil in a soup pot and heat over medium-low heat. Add the onion, sage, cumin, and celery seed. Sauté until onion is tender.Then add the broth, water, coconut milk, zucchini and hot pepper sauce. Bring to a simmer and cook until vegetables are tender, about 30 minutes. Transfer soup to blender and blend in batches, adding in the avocado.
