Ingredients

    1 1tsp Olive Oil
    1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    5 clove Garlic
    6 cup, chopped Cabbage, fresh
    .75 cup Brown Rice, medium grain
    .75 tsp Salt
    538 grams Chickpeas (garbanzo beans)
    1 cup Canned Tomatoes
    .75 cup (not packed) Raisins

Directions

finely chop red onion thinly sliced garlic cut cabbages into 1 inch chunks 1 19 ounce can chick peas drain and rinsed tomatoes chopped

in large saucepan, heat oil over medium heat. add onion and garlic: cook stirring frequently for 7 minutes or until onion is tender

stir in cabbage: cover and cook for 5 minutes or until cabbage begins to wilt

stir in brown rice, 2 cups water, and salt: bring to a boil. reduce to a simmer, cover and cook for 25 minutes or until rice is almost done.

stir in chickpeas, tomatoes, and raisins: bring to a boil. reduce to simmer, cover and cook for 10 minutes or until rice is tender.

Serving Size: makes 4 servings as meal
