Ingredients

    6.0 cup Whole Wheat Spaghetti, cooked (pasta)
    1.0 block Tofu, firm
    3.0 tbsp Peanut Butter, chunk style
    2.0 tsp Soy Sauce
    2.0 tsp packed Brown Sugar
    2.0 serving Green Onion (fresh-1 stalk)

Directions

To cook the pasta: Add uncooked pasta (any type) to a rice cooker. Add enough water to cover, +1/4 inch extra. Cook. Remove noodles and spray some non-stick cooking spray in the bottom of the container. Add tofu (pressed and broken into smaller pieces) to the rice cooker. It should be on the "warm" setting. Saute until satisfied. Add peanut butter, soy sauce, brown sugar, and 1/2 cup water. Set to cook. Cook until reduced (but not necessarily until cook time is over), a few minutes. Stir occasionally. Add noodles to sauce. Stir. Add chopped green onion, and serve with steamed vegetables

Serving Size: Makes 6 servings. Serve with steamed vegetables.
