Ingredients

    1 cup couscous, dry
    1 can 19 oz lentils, drained, rinsed
    1/4 cup chopped fresh cilantro
    1/2 tsp salt
    1 1/2 cup boiling water
    4 carrots, grated
    4 radishes, halved & sliced
    2 cups cauliflower, chopped
    2 stalks celery, sliced
    1 sweet red pepper, chopped
    1/2 cup vegetable oil
    1 1/2 Tbsp chili powder
    1 1/2 Tbsp water
    3 tsp sugar
    1 Tbsp lime rind, grated
    1/2 cup lime juice
    3/4 tsp salt
    1 1/2 cup English cucumber, chopped
    1 cups tomatoes, chopped
    1/2 cup feta cheese, crumbled
    1 green onion, chopped

Directions

Makes 8 servings:
Combine couscous and 1 1/2 cup boiling water - let stand 5 minutes, fluff with fork and add lentils, cilantro and salt. Put in bottom of large glass bowl.
Layer over couscous - carrots, radishes, cauliflower, celery, red pepper.
Combine as a dressing: oil, chili powder, 1 1/2 Tbsp water, sugar, lime rind, lime juice and 3/4 tsp salt. Shake and drizzle over veggies.
Layer on top with: cucumber, tomatoes, feta cheese and green onion.
Keeps well and makes a beautiful presentation.
