Ingredients

    2 cup green or brown lentils, dry
    6 cups vegetable broth
    3 large carrots
    3 cup Spinach, fresh
    1 14.5 oz can diced tomatoes
    1 large onion
    2 cups water
    2 bay leaves
    .25 tsp Pepper, black


Tips

There's only one vegan in my house, so when I make up a large batch like this I freeze in individual servings for healthy, convenient lunches.


Directions

Dice onions, carrots and celery and mince garlic. Add all ingredients to crock pot and set on high for 4 hours or low for up to 10 hours.

Salt to taste, after testing. Some veggie broths are already very high in sodium.

Serving Size: Makes 8 servings
