Introduction

This is the beefaroni I grew up with made with leaner meat. To make it even healthier you can add whole wheat pasta or home made sauce and cut the cheese out but I can't eat it without some cheese! Ingredients

    1.0 clove Garlic
    1.0 cup, sliced Zucchini
    16.0 oz Turkey, Ground turkey, 93% lean
    5.0 serving Newman's Own Marinara Sauce, 1/2 cup
    1.0 cup HEB italian blend shredded cheese
    6.0 oz Skinner Large Elbows Macaroni
    1.0 serving Mushrooms, Fresh, White Button, Sliced (3 oz / 85g)
    2.0 oz Onion, sweet, raw
    0.5 cup, chopped Green Peppers (bell peppers)
    0.5 serving Red Bell Pepper (one medium pepper)

Directions

Cook ground beef until done. While meat is cooking boil water to cook pasta. Remove beef, set aside, add onions, peppers and zucchini to the same pan and sautee until onion is translucent and peppers and zucchini are softened. The smaller you dice the veggies the quicker they will cook. Add garlic last and cook for only about a minute, maybe two. If you add in any earlier it can burn and become bitter. Using the minimal fat from the beef will also keep you from having to add extra olive oil for sauteeing and add flavor. Return beef to pan, add sauce and cooked macaroni. Stir to combine, Now you can either transfer to a serving dish, sprinkle cheese over top and bake until cheese is melted about 15 minutes or you can just add a quarter cup of cheese to your individual serving. The heat will melt the cheese pretty quickly. I prefer baking to be honest. Serving Size: Serves 4
