Ingredients

    1 tbsp olive oil
    1/3 cup scallions, chopped
    1 clove minced garlic
    kernels removed from 4 ears of sweet corn
    2 medium to large zucchini, quartered lengthwise then cut into two inch bars
    1/4 tsp ground cumin
    salt and pepper
    1/4 cup chopped fresh cilantro


Directions

Heat oil in skillet until just below the smoking point, quite hot. Cook scallions until soft and slightly browned, stirring occasionally, 2-3 minutes.

Add garlic, stir and saute for 1 minute. Add corn, zucchini, cumin, salt and pepper to taste. Cook and stir periodically until it's all tender, about 5 minutes.

Remove from heat and stir in cilantro.

    Good
    I made this recipe exactly as shown. It was good, but lacked any real punch. I think I will try it again but this time I will boost the cumin to 1 tsp. I also think the zucchini would cook better if the pieces were a little smaller. - 3/31/09
