Ingredients

    2 lbs Boneless Skinless Chicken Thighs
    32 oz 100% Natural Swanson Unsalted Chicken Broth
    28 oz 100% Natural Hunt's No Salt Added Crushed Tomatoes
    10 oz La Costeņa Chipotle Peppers in Adobo Sauce
    1 large Onion
    3 tsp Spice World Squeeze Minced Garlic
    1 tsp Cumin Powder

    Add salt to taste if needed.

Tips

This can be served over white rice, or you may prefer adding corn and/or potatoes to the list of ingredients and adjusting the cooking time as needed. Since it may be a little hot for some, you may want to use less of the chipotle pepper or add sour cream to your serving.


Directions

Cut chicken into bite-size pieces, and add to a large pot. Then add the chicken broth and crushed tomatoes. Next, mince the chipotle peppers in adobo sauce, and chop the onion. Add both of these, along with the garlic and cumin. Mix all the ingredients, and bring to a boil. Reduce heat, then cover and simmer until the chicken is done, stirring occasionally. If you like, you can serve this over white rice with a little sour cream on top.
