Ingredients

    3 cup (8 fl oz) Water, tap
    4.5 tsp Active Dry Yeast (by GRTMOMX3)
    .33 cup Honey
    5 cup All Purpose Unbleached Flour (by CAMBRIA94)
    3 tbsp Butter, salted
    .33 cup Honey

    3.5 cup Whole Wheat Flour

Directions

Sponge
Combine warm water, yeast, and honey in a large bowl. Add unbleached flour. Stir until blended. Cover and let rise 30 mins.
Dough:
In a small bowl, mix butter, honey, and salt. Stir this mixture into the sponge. Add 2-3 cups of Wheat flour until you have a soft dough. In Kitchenaid mixer, knead on level 2 with a dough hook for 2-3 minutes. Turn out onto a hard surface covered with wheat flour. knead in enough wheat flour to get a soft and sticky dough.
Put the dough in a well greased bowl. Cover and let rise until doubled - about 1 hour. Punch down and shape 2 loaves. Place in loaf pans that are well greased. Cover and let rise until doubled - about 30-40 minutes.
Pre-heat oven to 350. Bake 25-30 minutes
