Ingredients

    2.5 cups raw oats
    2 medium banana, very ripe
    1 cup oatbran
    1 cup water
    1 cup low fat soy milk
    .5 cup raisins, packed
    2 tsp Cinnamon, ground
    2 tsp Tumeric, ground
    2 tsp baking powder
    1 tsp Ginger, ground
    1 tsp Vanilla extract
    .5 tsp Guar Gum
    .5 tsp Xanthan Gum
    Stevia zero calorie sweetener to taste

Tips

For the Stevia, I use 1/4 tsp. NOW Foods Organic Stevia Extract Powder. You could use sugar or dates or another sweetener, but that would change the nutritional value.

Note: the guar gum and xanthan gum are not necessary. I just find they help this to be less "crumbly" and hold together better.


Directions

Grind 1.5 cups of the oats into flour using a blender and place in large bowl with the remaining 1 cup oats, 1 cup oat bran and the rest of the dry ingredients. Stir to combine. Puree bananas in a blender with water, vanilla and soy milk. Pour into dry ingredients and combine until mixed. Bake in an 8 x 8 glass or nonstick pan @ 350 for approx. 35 minutes.

You can bake in a 9 x 11 or other size pan, but you will need to adjust baking time accordingly for thinner bars.

Serving Size: makes 16 small bars. I have 2-4 for breakfast and individually for snacks.
