Introduction

Ingredients

    1 large Egg, fresh, whole, raw
    1.50 tsp Baking Powder
    0.75 serving Bob's Red Mill Almond Flour - per 1/4 Cup
    1 tbsp Carrington Farms Organic Coconut Oil
    .16 tbsp Oat Fiber - Life source 1 Tbl

Tips

Easy and you can add spices or cheese but be careful.
KETOers- I usually count all carbs with the exception of those that are not process by the body. Oat Fibre is not absorbed at all. The net carb you are subtracting is 3 grams. BUT, with this recipe I also take out the fibre in the almonds due to the processing of the almonds. That's another 3 grams, equalling a -6 gram of carbs bringing each muffin to 3.8 grams


Directions

coconut oil and set aside

Into a small bowl (mug, ramekin)measure out 3 Tablespoons of Almond Flour
To that add the oat fibre- NOT OAT MEAL!
add baking powder-- mix the dry ingredients

crack the egg and add it to the dry ingredients and mix well.
Add the bacon grease and mix well again.
At this point you can cook it in the same vessel you've mixed it in or transfer it to another container. I use a square ramekin if I want square bread.
