Ingredients

    1 cup frozen corn (thawed)
    1 (15.5oz.) can black beans; drained and rinsed.
    1/2 cup diced red bell pepper
    1/2 cup diced onion (Vidalia or red)
    1/2 cup diced tomato
    1 1/2 Tb. olive oil
    2 Tb lime juice
    3/4 tsp. chili powder ( chipolte)
    1 tsp. ground cumin
    1/2 tsp. Goya adoboe with pepper
    1/4 cup fresh minced cilantro

Directions

1. Mix the first 5 ingredients in a medium/large bowl.
2. Add the olive oil and lime juice to the bowl and mix to coat well.
3. Add the chili powder, cumin adoboe and cilantro and mix well.
4. Refrigerate at least 30 minutes
Makes 4 1-cup servings
