Ingredients

    1 tbsp Canola Oil
    1.50 cup Bush's, Black Beans
    0.50 cup Trader Joe's Fire Roasted Red Peppers
    1 tsp Aldi Minced Garlic
    2 serving Brown Rice (1/4 cup uncooked)
    13 oz Fit & Active turkey polska kielbasa
    1 cup kernels Yellow Sweet Corn, Frozen
    1 cup (8 fl oz) Water, tap
    1.5 cup Swanson Chicken Fat Free Chicken Broth Less Sodium

Directions

Slice kielbasa into thin slices. In a large skillet, heat oil over medium-high heat. Add kielbasa and onion; cook and stir 4-6 minutes or until onion is tender. Add garlic; cook 1 minute longer.
Meanwhile, rinse and drain black beans. Measure out frozen corn and begin to thaw. Drain the red peppers onto a paper towel and pat dry. Chop the peppers.
Add broth, water, rice and seasoning blend to the onion and sausage. Cover the pan and allow to cook on medium heat for 15-20 minutes, or until rice is tender.
Stir in beans, corn, and peppers. Cook until heated through.
