Ingredients

    * *Whole Wheat Flour, 1 cup
    * Fiber One Cereal, 0.75 cup (1 serving) - ground in coffee grinder or food processor
    * *Old Fashioned Quaker Oatmeal- Plain, 1.5 serving - ground into a flour
    * Baking Powder, 2 tsp
    * Baking Soda, 1 tsp
    * 2-3 Bananas, fresh, mashed
    * Applesauce, unsweetened, .5 cup
    * Egg substitute, liquid (Egg Beaters), 3 tbsp (or egg whites)
    * Honey, 1 Tbsp (optional)

Directions

Preheat Oven to 350

Mix dry ingredients together (cinnamon is an optional addition)
In a medium bowl, mash bananas with a fork. The original recipe called for 1 1/2 cups mashed banana, but I just used three bananas.
Add the rest of the wet ingredients to the bananas and mix.
Add the banana mixture to the dry ingredients
(Can also add nuts or raisins, though this will change the nutrition information. For example, 1 cup of raisins adds 45 calories to each muffin)

Spoon mixture into loaf pan and cook for 30-40 minutes (this is quite thick, so watch so as not to overcook). For muffins, cook about 20-22 minutes.
