Introduction

Ingredients

    3 oz Ground Pork
    1 cup, chopped or diced Broccoli, fresh
    1 tsp Ginger Root
    1 serving Sweet mini peppers (3)
    1 serving Green Onion (fresh-1 stalk)
    1 serving Fortune Udon Noodles (by NWHURLEYGIRL)

Tips

Skip the pork and add tofu and/or an additional cup of vegetables for a great vegetarian/vegan meal.


Directions

Roughly chop mini peppers and broccoli. Slice green onion, keeping white and green parts separate. Finely chop ginger and garlic.

Stir fry peppers and broccoli in a small amount of olive oil (medium heat) until slightly softened, about 3-4 minutes. Remove to a plate and set aside. In the same pan, stir fry pork until browned. Add ginger, garlic, white parts of onion, peppers, and broccoli. Stir for about 1 minute. Stir in vinegar.

Rinse udon noodles in hot water, breaking apart. Add noodles to pan, along with 1/4 c. water and 1 tsp. soy sauce (or ~1/4 of seasoning packet, if included with noodles). Stir until well combined.

Remove from heat and stir in lime juice, salt & pepper to taste. Garnish with fresh chopped cilantro.
