Introduction

Ingredients

    1/4 cup Coconut Flour
    1/2 cup Oat Four or GF flour blend
    1 tsp baking powder
    1 serving 100% Whey Protein
    1 tsp Cinnamon, ground
    1 tsp Salt
    4 packets Stevia
    6 oz Almond Milk Unsweetened
    2 oz Nonfat Plain Greek Yogurt
    4 Eggs whole - medium egg
    2 tsp Vanilla Extract
    3 tbsp Almond Butter


Directions

Mix the coconut flour with the oat flour or other gluten free flour blend. Add the baking powder, protein powder, salt, cinnamon, and stevia and mix to combine. In a separate bowl, mix the eggs, milk, yogurt, and vanilla. Add the wet to the dry and whisk together until smooth. Add the almond butter and whisk again until combined. Use a 1/4 cup to measure each pancake onto a buttered skillet on medium low heat. Flip when bubbles appear and cook another 30 seconds on the other side.

Serving Size: Makes 6 servings of 2, 4” pancakes
