8 oz. Penne Pasta
12 oz. Portabella Mushrooms, halved
2 Broccoli crowns, cut
1 large Onions, sliced
1 large red pepper, sliced
1 large Green Peppers, slced
6 tbsp Olive Oil
1 pint Grape Tomatoes
1 can medium black olives
Directions
Cook pasta according to package directions,
Steam broccoli until slightly tender.
In a large skillet, cook onions, peppers, mushrooms until tender.
Add broccoli, olives, and tomatoes until heated through.
Season with some oregano, garlic powder, red crushed pepper flakes, salt, and pepper to taste.
Drain pasta and toss with some olive oil until coated. Add to vegetables.
Top with a little grated romano or parmesan cheese.
Serving Size: 6-8 large servings
